Yep…I finally made my annual Frozen Strawberry Margarita Pie and it did NOT disappoint (if I do say so myself). Well, I say MY pie but really it’s a recipe I found in Gourmet magazine years ago. However, I do a few things differently so I guess you could say I’ve made it my own. The filling makes enough for two pies so I almost always make two graham cracker crusts to assemble two pies. You could also use a springform pan to make a really thick pie if you didn’t want to make two pies. Anyway, here are some pictures that illustrate the steps I took. I use the back of a metal measuring cup to shape the graham crack crust. Use whatever works best for you. After you shape the crusts in the pie dishes (or springform) you’ll bake it for 10 minutes and need to let it cool for at least 30 minutes.
I like to put them on a cooling rack because I believe it speeds up the cooling time.
This is what the filling looks like after you’ve blended it and before you fold the whipped cream into it.
Gently fold the whipped cream into the blended strawberry pie filling.
GENTLY fold in the whipped cream,
Pour the filling into the coolest graham cracker crusts.
After you freeze the pies for at least four hours you’ll want to let them thaw in the refrigerator for about 40 minutes before serving. I usually make the whipped cream topping while I’m waiting for it to thaw. Here’s the recipe I use…
Recipe for whipped cream: 1 cup heaving whipping cream 1/4 cup of sugar. I use my Cuisinart mixer stand (which I couldn’t live without) and whip the cream until you just have soft peaks then slowly add the sugar while beating it until you have stiff peaks.
I believe this pie is absolutely delicious and I should be sick of it by now because I’ve been making it for years but what can I say…it’s a winner!
