It’s strawberry season—-or at least it WAS when I first started creating this post. What can I say? Life has a way of getting away from you if you don’t buckle down. Anyway, a few weeks ago we headed to a local farm in Maryland called Butler’s Orchard to pick our share of ripe strawberries. We picked 18 POUNDS of them! You don’t realize how much you have until you get to the counter to pay for them. YIKES! I thought to myself, “self, what the hell are you going to do with all these strawberries?”. Well, here’s what I did with them…
- Strawberry Pancakes: This is so easy. You simply make pancakes with your favorite pancake recipe and add the strawberries on top of the hot pancakes. You can also add whipped cream or powdered sugar on top if you want.
- Strawberry Basil Margarita: Who doesn’t love a good summer cocktail? Combine 2 oz. Patron Tequila, 2 oz fresh sliced strawberries, 6 torn fresh basil leaves, 1 oz fresh lime juice, and a splash of simple syrup or agave in a shaker filled with ice. Shake. Pour into your glass of choice and garnish with basil. I didn’t salt the rim but you could use salt or sugar or both. Be creative and ENJOY!
- Spinach Strawberry Salad with Sesame Seed Dressing: 24 oz. fresh baby spinach, 1 pint of sliced fresh strawberries and 1/2 cup feta or goat cheese. Dressing: 1/2 cup extra virgin olive oil, 1/4 cup cider vinegar, 1/4 sugar or agave, 2 tbsp. sesame seeds, 1 tbsp. finely chopped shallot, and 1/4 tsp Worchestershire sauce. Drizzle over strawberries and spinach. Serve immediately.
- Strawberry Margarita Pie: This recipe is a summer favorite of my family. I found this recipe in Gourmet Magazine (God rest her soul) years ago and it’s a show stopper—I mean it will be devoured by your family and guests—trust me on this one! It’s not fast and it’s not super easy to make but it’s worth it and you can make it ahead of time. TIP: This recipe actually makes enough filling for two 9 inch pie dishes or one thick pie using a springform pan.
